Take a bite out of summer

Are your go-to healthy snacks out of season? Try these fresh summer superfoods to give your diet a colorful variety!

  1. Zucchini is a member of the summer squash family and looks similar to a cucumber. It is a great source of fiber and Vitamin A, and has been shown to help lower cholesterol. While zucchini is often sautéed or eaten raw in a salad, it can also be sliced thin and baked into chips.
  2. Watermelon is the perfect summer food because of its high water content and natural sugars. In addition to helping you stay hydrated, this water-filled fruit helps you feel less hungry and stay fuller longer. Watermelon also contains lycopene which helps your skin recover from sunburn and can help prevent cancer.
  3. Non-fat Greek yogurt is a healthy source of protein for those activity-packed weekends when you need to eat on the go. It can be used with both sweet and savory flavors or as a frozen treat for dessert. Probiotics also aid the digestive tract, which can become distressed through irregular or unhealthy summer eating habits.
  4. Apricots, peaches, nectarines and plums are at their peak ripeness during the hot summer months. Each can be eaten fresh or dried and contains dietary fiber, vitamin A and vitamin C as well as numerous antioxidants. These fruits make an excellent addition to any salad.
  5. Fish is a must for healthy eaters. It packs a protein punch without the dreaded saturated fats contained in many meats. The American Heart Association recommends eating at least two servings of fish per week. Salmon and halibut abound in the summertime, reaching their highest populations from July to September. These fish are high in Omega-3 and also contain B6, B12, magnesium, calcium, iron and zinc. Both salmon and halibut are delicious grilled, baked or fried.
